S’mores Protein Bars. Easy to make, gluten free, homemade copycat Quest s’mores protein bars!
I have always loved Quest bars for their great flavor and good macros, but unfortunately their price tag adds up over time! Not to mention that if I eat them too often, the sugar alcohols in them really bug my sensitive digestive system.
So I had to limit my intake (sob). But this prompted me to take matters into my own hands! Since them I’ve launched myself into recreating all my favorite protein bars at home.
And man are my homemade creations delicious! They have great flavor, taste fresh since they don’t have preservatives, and are friendly for most food allergies!

- 1/2 cup + 2 tbsp vanilla protein powder (70 g)
- 3 tbsp (21 g) coconut flour
- 1/4 cup (56 g) tahini
- 1 tsp (7 g) honey*
- 1/4 cup + 2 tbsp unsweetened almond milk
- 1 graham cracker sheet, broken into pieces
- 1 tbsp (10 g) white chocolate, chopped into chunks
- 1 tbsp (10 g) dark chocolate, chopped into chunks

- In a large bowl, stir together the protein powder, coconut flour, tahini, honey, and almond milk until thoroughly mixed. Gently fold in the graham cracker pieces, white chocolate, and dark chocolate chunks.
- On a piece of parchment or wax paper, shape the dough into a rectangle. Feel free to adjust rectangle to size preference, mine was about 7 by 4.5 inches.
- Place shaped dough into freezer for 15-20 minutes or until firm, but not totally set.
- Slice the firm dough into 4 bars. Wrap bars in plastic wrap, bags, or store in an airtight container. Keep frozen and thaw just slightly before enjoying!
