Tropical Granola. Homemade crunchy and flavorful granola with coconut, dried mango, and dried pineapple.

It’s mid-July and I am feeling supper summer-y and festive! And I am celebrating that feeling with this homemade Tropical Granola. It’s a simple granola base jazzed up with coconut flakes, dried pineapple, and dried mango.
And if you’’ve never had dried pineapple before – be warned! It’s as addictive as candy!


I love eating this granola simply by the handful or adding it to some Greek yogurt. It can make fun summer parfait or be your new on the go snack!


As if granola wasn’t amazing and addictive enough already, I have made it more so! Go ahead and make a double batch, you’ll need it! 😉

Ingredients
- 2 cups (180 g) oats
- 1/2 cup (21 g) unsweetened coconut flakes
- 1/2 cup (63 g) chopped macadamia nuts
- 1/4 cup (80 g) honey*
- 3 tbsp coconut oil, melted
- 2 tsp vanilla
- 1/2 cup (77 g) dried mango, chopped to size preference
- 1/2 cup (85 g) dried pineapple, chopped to size preference

Instructions
- Preheat oven to 300ºF. Line a baking sheet with parchment.
- In a large bowl stir together oats, coconut flakes, macadamia nuts, honey, coconut oil, and vanilla until evenly mixed.
- Spread mixture into an even layer on prepared sheet. Bake fro 20 minutes. Remove from oven and stir gently. Bake for 5-7 more minutes.
- Let cool completely. Break granola into pieces of desired size preference and gently stir in the dried mango and pineapple. Store in an airtight container at room temperature.
