Healthy No Bake Banana Chocolate Chip Bars. Gluten and dairy free dessert bars that sweet, cold, refreshing, and creamy!
My dad is taste tester numero uno in my life. He’ll happily sample anything and everything I put in front of him and give me nothing but honest feedback. And this recipe is extra special because immediately after inhaling one of these bars he exclaimed, “Wow! This is one of your best recipes ever.”
Him giving this recipe such high praise shocked me a bit. Not because I don’t think the bars are great too, but my dad is usually more into desserts that don’t have “healthy” tacked at the beginning of their name (which is totally understandable). Those kinds of high remarks are more commonly given by him toward things like my cheesecake brownies and peanut crunch donuts. Him placing these bars up on the same pedestal with those decadent and rich desserts is just extra proof of how amazing these are.
Just because you have health goals doesn’t mean you have to eliminate dessert! Life is way, way too short to not enjoy sweets and having treats like these on hand is a great way to satisfy those sweet cravings and still stay on track! I always love the challenge of creating satisfying desserts from more wholesome ingredients and this recipe definitely demolished that challenge.
These Healthy No Bake Banana Bars are definitely going to be in my regular rotation! The recipe is so easy with just one bowl and since they are frozen they can be stored long term and kept on hand for whenever a craving or occasion arises.

- 1 cup (about 2 medium) mashed bananas
- 1 cup (120 g) coconut flour
- 6 tbsp (63 g) honey*
- 6 tbsp (60 g) collagen powder
- 1/2 cup (128 g) natural peanut butter*
- 1 1/2 tbsp (23 g) semisweet chocolate chips
Ingredients

- Line a 9x5 inch loaf pan with parchment. Set aside.
- In a large bowl, stir all ingredients together until thoroughly combined. Press dough into parchment lined pan.
- Place in freezer for 20-30 minutes or until mostly hardened, but not completely frozen. Slice into 8 squares.
- Wrap each square individually in parchment or place all 8 in an airtight container with a lid. Keep stored in freezer. Bars can be enjoyed directly out of the freezer or slightly thawed.
