Ingredients

quinoa

cup (approx 175 g)
chopped zucchini

cup (approx 80 g)
chopped carrots

cup (250 g)
chickpeas
1/2
tsp
thyme

tsp
paprika

olive oil
Instructions
Prepare quinoa according to package directions.
Heat olive oil in a large skillet over medium high heat. Add zucchini, carrots, chickpeas, thyme, and paprika. Sauté for about 8 minutes or until vegetables are crisp tender.
Assemble bowls with quinoa and chickpea vegetable mixture.
