Corn Black Bean Salsa. Vibrant and flavorful salsa packed with corn, black beans, and amazingly fresh flavor!
I was at a local nutrition and sports performance facility a week or two ago and saw this Corn Black Bean Salsa posted on the nutrition bulletin. It looked so amazing and I knew had to try it!
The recipe didn’t have the original blog cited, but I was determined to find it so I could give the author proper credit. I did a little Pinterest digging and found out that this recipe is by Amy over at The Blond Cook. So shoutout to Amy for an amazing salsa recipe!
My entire family loved this salsa recipe because of all the different flavors and textures in involved. It is perfect simply on chips or other ways such as in tacos, on salads, or over a burrito bowl! The possibilities are truly endless with this salsa and we found that it will actually keep ok for a couple days covered in the fridge (so you can extend your salsa enjoyment to a multi day affair!).
