Blueberry Vanilla Overnight Oatmeal. Healthy and comforting oats with collagen protein for a quick and balanced breakfast!
Don’t make fun of me, but oatmeal might be favorite food. I eat it basically every morning and it is the ultimate comfort food for me!
I love trying new flavor combinations such as apple spice, pumpkin, date walnut, and peanut butter banana. But above all, I always fall back to berries and vanilla! Normally I use whey protein powder and blueberries or raspberries, but I decided to shake it up one day and use collagen powder instead and loved the turnout!
I don’t mind the taste of whey protein, but know it bugs some people so collagen is the perfect alternative for those who aren’t fond of that protein taste! Not only that, but collagen also boasts numerous benefits for your health such as better skin, hair, and nails and reduced chances of cardiovascular complications!
There are two primary ways you can enjoy this oatmeal the next morning. You can eat it straight from the fridge or you can heat in the microwave for about 2 minutes so that it’s nice and warm (my preferred way)! But either route you go, I can’t think of a better way to start the day than the cozy superfood blend that is this Blueberry Vanilla Overnight Oatmeal!

- 1/2 cup (40 g) oats
- 1 cup (237 mL) water or milk
- 1 tbsp (12 g) chia seeds
- 1 tsp vanilla extract
- 1/4 cup (42 g) blueberries
- 1 scoop or 2 heaping tablespoons (11 g) collagen powder (optional)
Ingredients

- In a small bowl or jar stir all the ingredients together until thoroughly mixed. Cover and refrigerate overnight.
- The next morning simply stir and enjoy! Feel free to add additional liquid or toppings to taste or heat in the microwave if desired!
