Preheat oven to 300ºF. Line a baking sheet with parchment.
In a large bowl stir together oats, coconut flakes, macadamia nuts, honey, coconut oil, and vanilla until evenly mixed.
Spread mixture into an even layer on prepared sheet. Bake fro 20 minutes. Remove from oven and stir gently. Bake for 5-7 more minutes.
Let cool completely. Break granola into pieces of desired size preference and gently stir in the dried mango and pineapple. Store in an airtight container at room temperature.
