Chocolate mint is one of those classic flavor combinations that I just can’t live without. The vibrant, sharp flavor of mint perfectly balances the rich creaminess of the chocolate while the mini chocolate chips add crunch – these bars are truly the perfect flavor/texture combo!

I loved these Mint Chocolate Chip Protein bars the first moment I tried them, but I truly fell in love when enjoying one post workout. I had just done an extremely hard spin workout and was drenched in sweat and in need of a replenishing snack. The coolness of these bars accompanied with the refreshing mint chocolate flavor instantly revived me! Not to mention that the bars are nutritionally balanced and the perfect thing to satiate you post workout.

Instructions
  1. In a large bowl, stir together the protein powder, coconut flour, tahini, honey, almond milk, and peppermint extract until thoroughly mixed. Fold in the chocolate chips.
  2. On a piece of parchment or wax paper, shape the dough into a rectangle. Feel free to adjust rectangle to size preference, mine was about 7 by 4.5 inches.
  3. Place shaped dough into freezer for 15-20 minutes or until firm, but not totally set.
  4. Slice the firm dough into 4 bars. Wrap bars in plastic wrap, bags, or store in an airtight container. Keep frozen and thaw just slightly before enjoying!
