The sun would set, the chill in the air would begin to bite, and my arms would grow tired from lugging around the couple pound bag of candy. After every successful Halloween I could not wait to go home, dump my candy out all over the table, and inventory my treasures! I wasn’t one of those kids who ate treats as I went along, for some reason I had to wait until I was done and home. It was more special to me that way.

Yet when I sorted through everything there was always a few things I tossed to the side, among them were Mounds and Almond Joys because coconut and chocolate just wasn’t my thing back then (I’ve come a loooong way since then!).

But instead of just throwing them out, I would give them to my mom because they were her favorite. Chocolate coconut is one of her favorite flavor combinations and I loved seeing the smile on her face when my little hands would bring her a stack of the candies. These bars are inspired by her.

I decided to come up with a healthier way to satisfy those insatiable chocolate coconut cravings in a food allergy, protein packed way while still keeping allllll the tastiness!

So next time that sweet tooth hits, treat to a healthy dose of chocolate coconut!

Instructions
  1. Place coconut flakes, oil, protein powder, and water into a food processor or blender. Process until the mixture reaches a smooth, dough like consistency.
  2. Use a cookie dough scoop or grab portions of the dough. Shape into 6 even bars of your desired length and thickness. Place shaped bars onto a parchment lined cookie sheet and freeze for 10-15 minutes.
  3. Place the chocolate chips in a small microwave safe bowl. Microwave at 50% power for 30 second increments until the chocolate is melted. Drizzle the chocolate over the chiller's protein bars. Let chocolate set completely.
  4. Store protein bars in an airtight container or in plastic bags. Keep in refrigerator or freezer.
