Fall is almost here and I am SO excited!! It is by far my favorite time of year for cooking and baking – vibrant spices, apples, pumpkin, squash, and more! Fall is definitely the dominant culinary season in my opinion.

I’m kicking off my fall food craze with some Apple Cinnamon Energy Balls. I love to enjoy a couple of these as a delicious healthy snack to pick me up between meals!

These Apple Cinnamon Energy Balls are mildly sweet in nature because I don’t add sugar, but feel free to add a tablespoon or so of a liquid sweetener such as honey if you have more of a sweet tooth! And if you do so and your mixture is a bit wet, add another dash of coconut flour until it gets to the consistency you desire.

The nutrition facts on these energy balls are also AH-mazing! 50 calories, 2 grams of sugar, and 7 grams of protein per ball! I used collagen powder in this recipe because of its numerous amazing health benefits and versatility in recipes!

Instructions
  1. Stir together all ingredients in a large bowl until throughly mixed.
  2. Take about tablespoon sized portions of the dough roll into balls. Store in an airtight container in the refrigerator or freezer. (My personal favorite way is to store them in the freezer then eat them slightly defrosted!)
